Everyday Meatballs

Ingredients
Number of Servings: 8
FEATURED: 1 pound of ground meat
1 ½ cups long-grain white rice
2 Tbsp butter
1 cup grated Parmesan
½ cup chopped almonds
1 cup cottage cheese
1 cup grated Gouda cheese
¼ cups chopped almonds
1 tsp grated lemon zest
1 tsp chopped thyme
1 tsp chopped sage
Pinch of grated nutmeg
Salt and pepper, to taste

Place meat, crumbs, milk/water, parsley, cheese (if using), 1 tsp salt, pepper, onion powder, eggs, and half of your minced garlic in a large bowl. Mix the ingredients together with a fork.
Form mixture into 1 ½-inch to 2-inch meatballs and arrange on a plate. (If you have time, set the meatballs in the fridge for 30 minutes to help them keep their shape.)
In a large pot, heat 2 Tbsp olive oil over medium heat. Add remaining garlic and some pepper flakes and let sizzle until garlic is golden (30 seconds to 1 minute). Add tomatoes and season with remaining salt. Let mixture simmer over low heat for about 10 minutes (for thicker puree) or 20 seconds (for crushed tomatoes), stirring occasionally.
With the stove on at the lowest heat possible to maintain a gentle simmer, add meatballs to sauce one by one and cover with a lid. Do not touch the meatballs for 20 to 25 minutes of cooking time so that they keep their shape!! Serve when cooked through.
