Greek Salad

Ingredients

FEATURED: 2 Tbsp. red wine vinegar
FEATURED: 2 cups cherry tomatoes, halved
1 cucumber, thinly sliced into half-moons
½ red onion, thinly sliced
1 cup Kalamata olives, halved (optional)
6 ounces feta, cut into small cubes
Juice of ½ lemon
1 tsp. dried oregano
Kosher salt
Freshly ground black pepper
¼ cup extra-virgin olive oil
Directions

Chop and prep all the vegetables.
In a large bowl, toss cucumber, onion, tomatoes, and olives (if using). Gently fold in feta.
In a small bowl, whisk vinegar, lemon juice, and oregano until combined; season with salt and pepper. Slowly pour in oil, whisking until dressing is smooth and emulsified.
Drizzle dressing over salad and toss again to combine.
Serve and enjoy!
