Greek Salad

Ingredients

  • FEATURED: 2 Tbsp. red wine vinegar 

  • FEATURED: 2 cups cherry tomatoes, halved 

  • 1 cucumber, thinly sliced into half-moons 

  • ½ red onion, thinly sliced 

  • 1 cup Kalamata olives, halved (optional) 

  • 6 ounces feta, cut into small cubes 

  • Juice of ½ lemon 

  • 1 tsp. dried oregano 

  • Kosher salt 

  • Freshly ground black pepper 

  • ¼ cup extra-virgin olive oil

  1. Chop and prep all the vegetables. 

  2. In a large bowl, toss cucumber, onion, tomatoes, and olives (if using). Gently fold in feta. 

  3. In a small bowl, whisk vinegar, lemon juice, and oregano until combined; season with salt and pepper. Slowly pour in oil, whisking until dressing is smooth and emulsified. 

  4. Drizzle dressing over salad and toss again to combine. 

  5. Serve and enjoy! 

Try something new and add 1 or more of these!  

  • Try serving with some grilled chicken and rice for a full meal! 

  • Add chickpeas to bulk it up a little bit! 

  • Serve on a bed of your favorite greens for a new twist on the salad! 

  • Try adding fresh herbs for a different taste!
