Summer Rice Noodle Salad

Ingredients 

Number of Servings: 6

  • FEATURED: 8 oz brown rice noodles

  • FEATURED: 1 ½ cup cabbage, chopped

  • 1 clove of garlic, minced

  • 1 cup cilantro, chopped 

  • ½ jalapeño, seeded and minced 

  • ½ cup lime juice 

  • 3 Tbsp. sugar

  • 1 ½ cup carrot, thinly sliced 

  • 1 ½ cup cucumber, diced 

  • ¼ cup mint, chopped

  • ¼ cup unsalted peanuts, chopped

Prep Time: 25 min

Cook Time: 10 min

Total Time: 30 min

  1. Prep and cut all the vegetables. 

  2. Combine garlic, cilantro, jalapeño, lime juice, and sugar in a small bowl, mix until fully incorporated and let sit for 5 minutes. 

  3. Prepare brown rice noodles according to the box and then let cool. 

  4. Combine the sauce, noodles, carrots, cucumber, cabbage, mint, and peanuts.  

  5. Let sit and combine for a few minutes. 

  6. Serve and enjoy! 

Try something new and add 1 or more of these!  

  • Add red pepper flakes to taste. 

  • Add grilled chicken or your favorite protein.
