Summer Rice Noodle Salad
Ingredients
Number of Servings: 6
FEATURED: 8 oz brown rice noodles
FEATURED: 1 ½ cup cabbage, chopped
1 clove of garlic, minced
1 cup cilantro, chopped
½ jalapeño, seeded and minced
½ cup lime juice
3 Tbsp. sugar
1 ½ cup carrot, thinly sliced
1 ½ cup cucumber, diced
¼ cup mint, chopped
¼ cup unsalted peanuts, chopped
Directions
Prep Time: 25 min
Cook Time: 10 min
Total Time: 30 min
Prep and cut all the vegetables.
Combine garlic, cilantro, jalapeño, lime juice, and sugar in a small bowl, mix until fully incorporated and let sit for 5 minutes.
Prepare brown rice noodles according to the box and then let cool.
Combine the sauce, noodles, carrots, cucumber, cabbage, mint, and peanuts.
Let sit and combine for a few minutes.
Serve and enjoy!
Try something new and add 1 or more of these!
Add red pepper flakes to taste.
