Pesto & Pea Pesto Salad

Ingredients 

Number of Servings: 10

  • FEATURED: 2 cups of fresh peas

  • FEATURED: ½ cup + 1 ½ Tbsp. basil pesto

  • 1 pound of pasta, fusilli, gemelli, or farfalle work best

  • ½ cup + 1 ½ Tbsp. light mayonnaise 

  • Juice of ½ lemon 

  • ½ tsp. pepper 

  • ¼ tsp. salt

Prep Time: 15 min

Cook Time: 10 min

Total Time: 25 min

  1. Cook pasta according to instructions on box. 

  2. For last minute of cooking pasta, add in peas. 

  3. Drain pasta and peas, and rinse with cold water. 

  4. Mix pesto, mayonnaise, lemon juice, pepper, and salt. 

  5. Add the pesto mixture to the pasta and peas and stir together until well incorporated. 

  6. Serve and enjoy!

Try something new and add 1 or more of these!  

  • Add sliced fresh tomatoes at step 5. 

  • Add your favorite vegetable at step 5. 

  • Add some mozzarella pearls or some parmesan cheese. 

  • Serve with a grilled chicken breast or your favorite protein!
