Broccoli Cheddar Rice

Ingredients 

Number of Servings: 5

  • 1 Tbsp. olive oil 

  • 1 small yellow or white onion, diced 

  • 1 tsp. minced garlic 

  • 2 cups low sodium chicken broth 

  • 1 cup long grain white rice 

  • 1/3 cup water 

  • 2 Tbsp. unsalted butter 

  • ¼ tsp. salt 

  • ¼ tsp. pepper 

  • 1 ½ cup broccoli, chopped 

  • 1 cup shredded cheddar 


Directions

Prep Time: 5 min

Cook Time: 20 min

Total Time: 25 min

  1. Heat olive oil in a medium pan over medium heat, add onions and garlic and sauté for about 2 minutes, stirring occasionally. 

  2. Add the chicken broth to the pan and bring to a boil. 

  3. Add the rice, cover and reduce temperature to low, stirring occasionally, simmer for about 12 minutes. Remove cover and stir well. 

  4. Add butter, water, salt and pepper, and continue simmering for another 3 minutes. 

  5. Add broccoli, mix in, and continue to cook on low for 4-5 minutes, or until broccoli in soft to your liking. 

  6. Stir in cheese, serve and enjoy! 

Try something new and add 1 or more of these! 

  • Try replacing the water with equal parts milk to make the dish creamier! 

  • Add some of your favorite protein to bulk up the dish! 

  • Try adding some fresh herbs for a pop of color and flavor!
