Homemade Guacamole

Ingredients 

Number of Servings: 8

  • 6 medium avocadoes 

  • 1/2 yellow onion 

  • 1/2 small red onion, finely diced 

  • 2 Roma tomatoes, finely diced & seeded 

  • 1/2 bunch cilantro, thinly slice & rough chop 

  • 2-3 jalapeños, finely diced & seeded 

  • Juice of 1-2 limes, to taste 

  • Salt to taste

  1. Remove the flesh of the avocado into a large mixing bowl.  

  2. Using a cheese grater, take the 1/2 yellow onion and grate it until it is a liquid-y pulp. Add to the bowl of avocado. 

  3. Add the diced red onion, cilantro, juice from one lime, diced jalapeños, and a large pinch of salt. Mash together using a fork or potato masher. 

  4. Take a sample and taste for lime and salt. Add more if needed. Add more jalapeño if you want more spice. 

  5. Once the salt and lime taste right, stir in the diced tomatoes. 

  6. Serve with tortilla chips, on a taco bar, with your favorite breakfast burrito, or however you desire! 

Notes:

  • If you are saving leftovers or prepping a few hours before serving, seal with plastic wrap touching the top of the guac.  

  • Discolored guac still tastes great! Avocado browns when exposed to air, but it is still the same great dip.
