Healthier Baked Beans

Ingredients 

Number of Servings: 10

  • 1 pound bag of dried Navy Beans or Great Northern Beans OR 4 cans either bean drained and rinsed

  • 1 pound of low sodium turkey bacon, diced into small chunks or strips

  • 1 large yellow onion, chopped

  • 2-3 large cloves garlic, minced

  • 1 Tbsp. mustard powder

  • 1 Tbsp. ground black pepper

  • 1/4 cup A1 sauce or other steak sauce

  • 1/8 cup Worcestershire sauce

  • 1/4 cup apple cider vinegar

  • 3/4 cup ketchup

  • 1/2 cup pure maple syrup

  • 3 Tbsp brown sugar

Total Time: 2-4 hrs

  1. If using canned beans skip to step 2. Add the 1lb bag of beans to a large stockpot and cover with 2-3 inches of cold water. Cook on high heat until the beans come to a boil, then strain the beans and return to pan. Cover again with a lot of cold water (until the water is an inch below the lip of the pot) and bring to a boil. This time, when beans boil, reduce heat and simmer for approximately 2 hours. The beans should be covered in ample water throughout the whole cooking process; if the water is getting low at any point add more hot water. The beans are done when you cut one in half and there is no white visible on the inside.

  2. Mix all ingredients in your dutch oven, oven safe pot, or 13x19 pan. Taste the mixture for seasoning, and make sure the mixture looks fairly liquidy or goopy (should not look as dry as the end result, needs extra liquid to cook). If it needs more moisture, add chicken stock (or water) to loosen the mixture. Cover the pot/pan with foil and bake covered for 1-1.5 hours hours. After the first covered cook time, remove the foil, stir thoroughly (scraping the bottom of the pan), and bake uncovered for another 30-40 minutes, until goopy and delicious!
