Jerk Black Bean and Bell Pepper Wraps

Ingredients
Number of Servings: 4
(2 wraps per serving)
FEATURED: 8 collard green leaves
FEATURED: 1 Tbsp. Jerk seasoning
Kosher salt
1/3 cup nonfat Greek yogurt
1 – 14.5 ounce can black beans, drained and rinsed
2 Tbsp. Lime Juice
2 cups of cabbage or your favorite green
2 small bell peppers, sliced into strips and sautéed

Cook Time: 15 min
Total Time: 40 min
Remove the stem below where it connects to the leaf, and lay them
Fill a large pan with enough water to coat the bottom, arrange a few of the leaves at the bottom of the pan and sprinkle with a small amount of salt. Cook on medium high heat and cook until steam appears, then turn down heat to low, and cover pan. Steam for about 5-6 minutes. Remove and place on a baking sheet to cool.
In a small bowl, mash the black beans, and combine them with the cabbage, lime juice, ¼ cup of yogurt, and the jerk seasoning and mix until well combined.
Lay the collard leaf down with the underside up, add in the cabbage mix and peppers.
Fold in the sides of the collard leaf and roll up like a burrito. Repeat until all leaves are full, serve, and enjoy!
Try something new and add 1 or more of these!
Add your favorite meat seasoned with the jerk seasoning in the middle of the wrap for some extra protein!
Add some avocado, cheese, or sour cream for some creaminess!
Add some eggs to breakfast wrap!
