INGREDIENTS 

  • 14oz canned salmon, drained and bones/skin removed

  • 2 Tbsp. Olive oil

  • ½ bell pepper, chopped

  • ½ onion, chopped

  • 1 egg, beaten

  • ¼ cup bread crumbs

  • 2 Tbsp. Chopped parsley

  • 1 Tsp. Seafood seasoning (such as Old Bay)

  • Salt, Pepper to taste

Number of Servings: 4


DIRECTIONS

  1. Preheat oven to 350°

  2. Sautée onion and pepper in 1tbsp olive oil, season with salt and pepper, and cook until translucent.

  3. In a medium bowl, add remaining ingredients and mix until just combined.

  4. Chill mixture in fridge for 20 minutes.

  5. Using hands, form into 1” thick patties.

  6. Grease baking sheet with remaining 1 Tbsp of olive oil.

  7. Place patties on baking sheet and bake for 20 minutes, flipping halfway through, until golden brown.
