Salmon Cakes

INGREDIENTS
14oz canned salmon, drained and bones/skin removed
2 Tbsp. Olive oil
½ bell pepper, chopped
½ onion, chopped
1 egg, beaten
¼ cup bread crumbs
2 Tbsp. Chopped parsley
1 Tsp. Seafood seasoning (such as Old Bay)
Salt, Pepper to taste

DIRECTIONS
Preheat oven to 350°
Sautée onion and pepper in 1tbsp olive oil, season with salt and pepper, and cook until translucent.
In a medium bowl, add remaining ingredients and mix until just combined.
Chill mixture in fridge for 20 minutes.
Using hands, form into 1” thick patties.
Grease baking sheet with remaining 1 Tbsp of olive oil.
Place patties on baking sheet and bake for 20 minutes, flipping halfway through, until golden brown.
