Lemon Barley and Kale Salad

Ingredients
Number of Servings: 8
FEATURED: 1-pound fresh kale
FEATURED: 8 cloves of garlic, crushed
1 c of pearl barley
1 tsp salt
4 Tbsp olive oil, divided
2 medium onions, finely chopped
1 tsp red pepper flakes
1 lemon, zest, and juice
Directions:
Prep Time: 10 min
Cook Time: 30 min
Total Time: 40 min
Cook barley according to instructions on box/bag.
In a large sauté pan, over medium heat, add 1 Tbsp olive oil and chopped onions. Cook until soft and slightly caramelized, about 10 minutes.
Add in red pepper flakes, stir.
Add in kale and cook until slightly wilted, about 5 to 10 minutes.
Enjoy warm or cold!

1 c shredded mozzarella cheese or shredded Italian mix cheese, added in at step 4.
1 can chickpeas, drained and rinsed, added in at step 4.
