Lemon Barley and Kale Salad

Ingredients

Number of Servings: 

  • FEATURED: 1-pound fresh kale 

  • FEATURED: 8 cloves of garlic, crushed 

  • 1 c of pearl barley 

  • 1 tsp salt  

  •  4 Tbsp olive oil, divided 

  • 2 medium onions, finely chopped 

  • 1 tsp red pepper flakes 

  • 1 lemon, zest, and juice 


Directions: 

Prep Time: 10 min

Cook Time: 30 min

Total Time: 40 min 

  1. Cook barley according to instructions on box/bag. 

  2. In a large sauté pan, over medium heat, add 1 Tbsp olive oil and chopped onions. Cook until soft and slightly caramelized, about 10 minutes. 

  3. Add in red pepper flakes, stir. 

  4. Add in kale and cook until slightly wilted, about 5 to 10 minutes. 

  5. Enjoy warm or cold! 

Try something new and add 1 or more of these! 

  • 1-pound Italian sausage cooked and added in at step 4. 

  • 1 c shredded mozzarella cheese or shredded Italian mix cheese, added in at step 4. 

  • 1 can chickpeas, drained and rinsed, added in at step 4.
