Whole Carrot Curry Fritters

Ingredients

Number of Servings: 
6 (2 fritters per serving)

  • FEATURED: 1 ½ pounds of carrots, finely grated 

  • FEATURED: 3 ¾ tsp curry powder 

  • 1 medium red onion, grated 

  • 1 clove of garlic, finely chopped 

  • 1 cup flour 

  • 1 tsp salt 

  • ½ cup carrot tops, finely chopped 

  • ¼ cup water 

  • ¼ tsp red pepper flakes

Prep Time: 30 min

Cook Time: 20-25 min

Total Time: 50-55 min 

  1. Preheat oven to 400 degrees. 

  2. Finely grate the carrots and onion.  

  3. In a large bowl combine the carrots, onion, chopped garlic, and mix well. 

  4. Add the rest of the ingredients except the water and mix well to ensure even distribution of seasonings and flour. 

  5. Slowly add water and stir until a somewhat thick and sticky consistency is reached. 

  6. On a well-greased baking sheet add a ⅓ cup scoop of the mixture and flatten to about ½ inch thick. 

  7. Bake patties for 20-25 minutes. Flip halfway.
