Pickling Liquid

INGREDIENTS 

  • ½ gallon white vinegar

  • ½ gallon water

  • A good sprinkle of:

    • Black peppercorns

    • Dill seed

    • Mustard powder

  • Dehydrated onion flakes, or onion powder

  • A pinch of crushed red pepper, or more for taste

  • 4-6 bay leaves

  • 1 cup sugar

  • 4-5 hefty pinches of salt

  • 3-5 cloves of garlic smashed and or cut in half, do not need to be peeled

  • Veggies of your choice, sliced or chopped to fit into your jars

DIRECTIONS

  1. Add all ingredients, except your vegetable that you are pickling, to a non-reactive saucepan and bring to a boil.

  2. Once liquid is boiling, turn down to a simmer, and taste for seasoning (sugar and salt), add more as needed.

  3. Simmer for at least 10 minutes, then strain hot liquid and pour liquid over the prepared veggies.

  4. Let jars sit until at room temperature and then move to the refrigerator. Refrigerate for at least 24 hours before enjoying and keep them refrigerated if you do not plan to can or jar them!

  5. Enjoy!
