Quick Fried Rice

Ingredients 

Number of Servings: 4

  • FEATURED: 2 Tbsp. low sodium soy sauce

  • FEATURED: 1 ½ cups of sugar snap peas, sliced

  • 1 ¼ cups of precooked brown rice or day-old rice

  • 1 Tbsp. honey

  • 2 Tbsp. peanut oil or canola oil

  • 3 large eggs, lightly beaten (optional omit if watching cholesterol)

  • 1/3 cup unsalted peanuts or cashews, chopped

  • 3 cloves of garlic, crushed

  • Small spoonful or dash of siracha or chili sauce, optional


Directions

Prep Time: 5 min

Cook Time: 20 min

Total Time: 25 min

  1. Add 1 tsp. of peanut or canola oil to a large pan and cook eggs until set, put aside.

  2. Add 1 tsp. of oil to pan and heat, add rice, and stir fry for about 4 minutes. Add soy sauce, chili sauce or siracha if using, honey, and the rest of the peanut or canola oil into the pan and cook for 2-3 minutes or until absorbed.

  3. Add sugar snap peas, nuts, and garlic and cook for an additional 2 minutes, or until the nuts begin to brown, add back the eggs, and cook for 2 minutes or until thoroughly heated.

  4. Serve and enjoy!

Try something new and add 1 or more of these! 

  • Try adding shrimp or your favorite protein! Add at step 2 and toss shrimp with liquids before adding to pan with rice and cook for 1-2 minutes on each side or until shrimp are no longer clear.

  • If you want to add more vegetables, add them at step 2, and make sure they are chopped small so they will cook quickly (in 3-4 minutes).
