Quick Fried Rice

Ingredients
Number of Servings: 4
FEATURED: 2 Tbsp. low sodium soy sauce
FEATURED: 1 ½ cups of sugar snap peas, sliced
1 ¼ cups of precooked brown rice or day-old rice
1 Tbsp. honey
2 Tbsp. peanut oil or canola oil
3 large eggs, lightly beaten (optional omit if watching cholesterol)
1/3 cup unsalted peanuts or cashews, chopped
3 cloves of garlic, crushed
Small spoonful or dash of siracha or chili sauce, optional
Directions
Prep Time: 5 min
Cook Time: 20 min
Total Time: 25 min
Add 1 tsp. of peanut or canola oil to a large pan and cook eggs until set, put aside.
Add 1 tsp. of oil to pan and heat, add rice, and stir fry for about 4 minutes. Add soy sauce, chili sauce or siracha if using, honey, and the rest of the peanut or canola oil into the pan and cook for 2-3 minutes or until absorbed.
Add sugar snap peas, nuts, and garlic and cook for an additional 2 minutes, or until the nuts begin to brown, add back the eggs, and cook for 2 minutes or until thoroughly heated.
Serve and enjoy!
Try something new and add 1 or more of these!
Try adding shrimp or your favorite protein! Add at step 2 and toss shrimp with liquids before adding to pan with rice and cook for 1-2 minutes on each side or until shrimp are no longer clear.
If you want to add more vegetables, add them at step 2, and make sure they are chopped small so they will cook quickly (in 3-4 minutes).
