Spinach Artichoke Dip

Ingredients 

Number of Servings: 8

  • FEATURED: 14 ounces of artichoke hearts, well drained, rinsed, and chopped small

  • FEATURED: ½ pound of fresh spinach

  • 1 cup low-fat sour cream

  • ½ cup low-fat small cud cottage cheese

  • 1 cup parmesan cheese

  • ½ tsp. salt

  • ½ tsp. pepper

  • 2 cloves of minced garlic or 1 tsp. garlic powder


Directions

Prep Time: 10 min

Cook Time: 25 min

Total Time: 35 min

  1. Preheat oven to 400 degrees Fahrenheit.

  2. Cook down spinach in a pan on low heat, drain thoroughly, you will have to squeeze the water out of it.

  3. In a bowl, mix all ingredients together thoroughly.

  4. Pour into an 8x8 pan and bake for 25 minutes.

  5. Broil for 1-2 minutes, to get top a little golden and melted.

  6. Serve and enjoy!

Try something new and add 1 or more of these! 

  • Try replacing the spinach with other leafy greens like chard or turnip greens!

  • Try adding fresh diced tomatoes for a new flavor!

  • Instead of eating it as a dip, serve it on a pasta or sandwich!
