Tomatillo Salsa

Ingredients 

Number of Servings: 8

  • 2 pounds tomatillos, peeled and rinsed 

  • 2-3 small jalapeños, seeded 

  • 1 small white or yellow onion, peeled and roughly chopped 

  • 2-3 cloves garlic, peeled 

  • 1 bunch cilantro stems (just the stems not the leaves) 

  • 1 Tbsp. olive oil 

  • Pinch of salt, to taste

Prep Time: 10 min

Cook Time: 40 min

Total Time: 50 min

  1. Toss all ingredients in any oil (preferred: olive, veggie) with a pinch of salt. Bake in an oven on high heat (400-450°F) on a sheet tray until tomatillos start to brown and collapse/leak juices.  

  2. Let cool and blend together. Either crush the salsa by hand in a mixing bowl until it is your desired consistency or blend in a food processor/blender. 

  3. Enjoy with tacos, as a marinade for chicken, pork, or fish, or use as a flavor base for your favorite salsa! This recipe is very versatile
