Balsamic Roasted Vegetables

Ingredients 

Number of Servings: 6

  • FEATURED: 3 Tbsp. balsamic vinegar

  • FEATURED: 1 bunch of radishes

  • 3 Tbsp. olive oil  

  • 2 Tbsp. brown sugar 

  • 2 Tbsp. low sodium soy sauce 

  • ½ Tbsp. Dijon mustard 

  • ½ tsp dried basil

  • ½ tsp black pepper 

  • ½ tsp salt 

  • 8 oz mushrooms 

  • 1 medium red onion 

  • ½ lb. carrots 

  • ½ lb. potatoes

Prep Time: 20 min

Cook Time: 50 min

Total Time: 70 min

  1. Preheat oven to 400 degrees. 

  2. In a small bowl mix together, olive oil, balsamic vinegar, brown sugar, soy sauce, Dijon mustard, dried basil, pepper, and salt. 

  3. Cut up mushrooms, onions, carrots, potatoes, and radishes in half, or into desired size, all should be similar sizes to ensure they all cook throughout. 

  4. Pour mixture from step 2 onto the vegetables and ensure they are all well covered. 

  5. Put vegetables onto a baking sheet and roast for 50 minutes, or until tender and browned, stirring them halfway through. 

  6. Serve, and enjoy! 

Try something new and add 1 or more of these!

  • Add ¼ bunch of parsley for garnish, chopped  

  • Serve over your favorite rice. 

  • Add your favorite fresh herbs at step 6. 

  • Serve as a side with chicken or beef.
