Chive Cornbread Muffins

Ingredients

  • 1¼ cups all-purpose flour

  • ¾ cup cornmeal

  • 6 Tbsp. sugar

  • 1 Tbsp. baking powder

  • 1 tsp. salt

  • 2 large eggs

  • ¾ cup milk

  • ½ cup unsalted butter, melted and cooled

  • ½ cup shredded cheddar

  • ¼ cup chives, chopped

Total Time: 30 min

  1. Preheat the oven to 350°F degrees. Line a muffin pan with paper liners or spray with non-stick cooking spray.

  2. In a medium bowl whisk together eggs, honey, and milk, and then set it aside.

  3. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt. Add in the chives and cheddar and mix again.

  4. Add the milk mixture and the melted butter to the dry ingredients. Whisk until just blended. Do not overmix; it's okay if there are a few lumps.

  5. Spoon the batter evenly into the prepared muffin pan, filling each cup about ¾ full. Bake for 17 to 20 minutes, or until the tops are set and golden.

  6. Cool the muffins for a few minutes in the pan, then serve and enjoy!

Try something new and add 1 or more of these!

  • Try using a different kind of cheese or using buttermilk instead of milk!

  • Try adding some sliced jalapeños for added spice!

  • Try using any leftover muffins to make dressing or stuffing!

  • Try subbing half of the flour with white whole wheat flour to increase fiber!
